Surprisingly, green tea is not just for drinking anymore. Ever since Starbucks added the Green Tea Latte to its menu in 2006, cafes around the world have been experimenting with matcha (green tea powder) as a new flavor.
There are now a wide range of green tea recipes – with matcha being added to salads, meats, smoothies, muffins, and other desserts.
Matcha is a new favorite ingredient because of its antioxidant properties. A study in Colorado in 2003 found that matcha has three times more epigallocatechin gallate (EGCG) than regular green tea.
When you eat or drink matcha, you consume the whole green tea leaf and get 100% of the health benefits. The whole tea leaves are ground into a fine powder. Then you add this powder as an ingredient to recipes.
On the other hand, when you drink a regular cup of green tea (green teas other than matcha), you don’t consume the whole tea leaf. You brew the tea leaves in water, drink the water, and throw the tea leaves away. In this way, you only get around 30% of the potential benefits of green tea.

Well, this all sounds good, but does it taste good? I was skeptical about adding green tea powder to my recipes because I thought it would drastically alter the taste. I started to experiment and was surprised to find that in many cases the matcha actually made the food taste better.
